#9: Conching Made Chocolate Silky
Rodolphe Lindt’s 1879 conching process transformed chocolate texture. By continuously mixing and aerating chocolate for long periods, conching reduced grittiness, improved flavor, and created that smooth melt people now expect. Before conching, chocolate could be coarse and sandy. After conching, it became luxurious in the mouth. This was not a minor technical upgrade. It was the difference between “interesting historic food” and “please leave me alone with this bar.”
