#9: Relish trays served automatically before the meal
Before entrées arrived, many restaurants brought out relish trays filled with pickles, olives, and raw vegetables. These small offerings kept guests occupied and added a sense of hospitality. They also reflected a time when pacing in restaurants was slower. Pre-meal extras are now less common or treated as paid appetizers.
